Nature journal
I like the idea of doing a nature journal with my class. I teach kindergarten tho so we would most likely do a very brief journaling together, perhaps on lined paper with an area for a picture. We talk alot about the discriptions of things, size, shape, color etc. The students would do their own drawings and share them with each other. Kindergarten has a large range of knowlege and writing abilities, so journaling would need to fit each students abilities.
